As Bakery Manager, you'll have the overall responsibility for both Production (BOH) and Front of House (FOH), ensuring consistently high quality, strong financial performance and an engaged team. Working closely with the Head Baker and Front of House Manager, you'll lead the continued development of the bakery while helping shape one of the most important parts of the Coffee Collective experience.

About Coffee Collective
Coffee Collective is a specialty coffee roastery with eight coffee shops and a bakery in Copenhagen. We work directly with producers to create exceptional coffee experiences while generating greater value through a transparent value chain. We have been B Corp certified since 2019.
Collective Bakery supplies all Coffee Collective’s Copenhagen coffee shops with bread and pastries while also welcoming guests directly at the bakery on Nørrebrogade. Like everything we do at Coffee Collective, Collective Bakery is driven by curiosity about quality, raw materials and craftsmanship, and by long-term relationships with the people behind them.
What you’ll be responsible for
Lead and develop the team
- Lead, support and develop the bakery leadership team, including the Head Baker and Front of House Manager.
- Recruit and onboard employees in collaboration with HR.
- Build a collaborative culture where employees take ownership, grow and hold themselves and each other accountable.
Run the bakery
- Hold the overall responsibility for the daily operation of Production and Front of House.
- Ensure reliable deliveries to Coffee Collective's coffee shops and wholesale customers.
- Ensure consistently high product quality and develop our products and offering together with the Head Baker.
- Own the bakery budget and financial performance, working closely with Finance on labour costs, product costs, margins and profitability.
- Continuously improve workflows, planning and the way we work, balancing quality, people and the long-term health of the business.
Collaborate across Coffee Collective
- Work closely with Coffee Shop operations, Wholesale, Marketing, Finance and HR.
- Strengthen the collaboration between the bakery and Coffee Collective's coffee shops.
We’re looking for someone who
We don’t expect you to fit one specific background. What matters is that you understand how to lead people and operations while caring deeply about the quality of what we produce and the experience we create. Most importantly, we’re looking for someone who wants to build a great bakery together with the people around them.
We imagine that you:
- Have solid leadership experience from a bakery, food production, restaurant or hospitality business, ideally with responsibility for managers or multiple teams.
- Enjoy developing people and creating an environment where others can take responsibility and grow.
- Combine strong operational skills with commercial understanding.
- Are comfortable working with budgets, costs and financial performance.
- Are structured, pragmatic and solution-oriented and enjoy finding better ways of doing things.
- Care deeply about quality and craftsmanship and are curious about ingredients, producers and how great products are made.
- Speak English fluently. Danish is an advantage, but not a requirement.

Practical information
The position is based at Collective Bakery on Nørrebrogade, with our headquarters on Godthåbsvej in Frederiksberg also serving as a regular workplace. The role is a mix of being present in the day-to-day bakery operation and office work.
The bakery operates seven days a week, and you'll help create a healthy working rhythm for both you and the team while ensuring consistently high standards across Production and Front of House.
