The PhD project will be a part of an Alliance PhD project between Tecnológico de Monterrey (TEC) and DTU Food. Additionally, you as a candidate will work on a project called REPLANTED that is funded by AgriFoodTure consisting of partners covering the whole value chain from academia and large enterprises.
The PhD will be obtaining new knowledge on the use of fungi mycelium in Plant-based alternatives for meat and dairy. Additionally, the PhD will look at fungi mycelium fermentation and valorization of waste streams from the food industries.

The focus will be the fish pathogen Flavobacterium psychrophilum and bacteriophages as a prophylactic control measure against disease outbreaks with this important pathogen in aquaculture.
